Palma Bread started in Santa Catalina as a Swedish idea with a Mallorcan address: bake the classics properly — sourdough, cinnamon buns, laminated doughs — and keep questioning how they can be better.
Today a young, international team of bakers works side by side across three bakeries, described in the local press as “testing the boundaries of what can and can’t be done in baking”. The dough is mixed, shaped and proofed by hand; the sourdough ferments overnight before it ever sees the oven.
What has grown from one small bakery is now recognised as one of Mallorca’s leading bakeries — their own words, and the queue agrees.
