What to order

No menus, no fuss — the counter changes with the morning’s bake. These four are the ones people cross town for.

Cinnamon & cardamom buns

The reason for the Saturday queue. Hand-twisted, proofed slowly, finished with pearl sugar the Swedish way.

Sourdough bread

Naturally leavened, long-fermented loaves — crusty outside, open and moist inside, baked through the morning.

A tray of semlor — cream-filled cardamom buns dusted with icing sugar

Swedish pastries & specials

Semlor in season, laminated pastries year round — and a new special almost every week on Instagram.

Almond croissants

The quiet favourite — twice-baked, filled and topped with almond. Ask for one before noon; they rarely last longer.

Rethinking bread, every morning

Palma Bread started in Santa Catalina as a Swedish idea with a Mallorcan address: bake the classics properly — sourdough, cinnamon buns, laminated doughs — and keep questioning how they can be better.

Today a young, international team of bakers works side by side across three bakeries, described in the local press as “testing the boundaries of what can and can’t be done in baking”. The dough is mixed, shaped and proofed by hand; the sourdough ferments overnight before it ever sees the oven.

What has grown from one small bakery is now recognised as one of Mallorca’s leading bakeries — their own words, and the queue agrees.

Same bread, same buns, three neighbourhoods. Santa Catalina is the original — the other two carry the full morning bake.
